- Pre-heat oven to 350 degrees. Combine all ingredients together in a large bowl, with the exception of the salsa and cheese. Using your hands works best.
- Press half of the meatloaf mixture into the bottom of a loaf pan.
- Place the cheese chunks along the center of the loaf pan, leaving about an inch around the perimeter of the meatloaf.
- Cover the cheese layer with the rest of the meat mixture and press it down in the pan gently.
- Bake for 45 minutes.
- Top with heated salsa or canned diced tomatoes and enjoy!

Turkey Meatloaf with Sun Dried Tomato Pesto
- 2 pounds ground turkey
- 1 garlic clove, minced
- 1 small onion, chopped
- 1 celery stalk, chopped finely
- 1/2 teaspoon pink Himalayan sea salt
- 1 teaspoon ground pepper
- 1/4 cup almond meal.
- 1 egg
- 2 tablespoons tomato ketchup
- 1/4 cup low sugar Sun Dried Tomato Pesto
- 1 cup mozzarella cheese
- Preheat oven to 400 degrees.
- Mix all ingredients together by hand, except cheese, in a large mixing bowl.
- Place the meat mixture into a loaf pan.
- Bake for 45 minutes.
- Top with Mozzarella and place back in the oven for a few more minutes, until the cheese is melted and bubbly.
